B16D24 CARRÉ is a single-plot whisky from a single plot of barley from the Vulson climate, harvested in 2016. Aged for 8 years in a single cask, a former Vin Jaune cask, it was then divided into two batches, to offer an experience of the influence of the alcoholic strength on the nature of a whisky, 2 expressions with unique characters and their own flavors.

B16D24 TRIANGLE is a cask strength! It has been bottled at its natural degree of aging, 52.3%, where time leads it: a massive, generous, opulent whisky with a good-natured side and a mellowness full of delicacy.

B16D24 CARRÉ has seen a gradual reduction in its alcohol content by adding water to reach 44% vol. At this level, B16D24 CARRÉ offers balance and tasty comfort, a promise of gourmet freshness.

Tasting tips

A vintage for “Flavis” fans and Savagnin enthusiasts, a whisky made to get some fresh air!

Deep, slightly cloudy yellow.

A slight deposit may be observed, which comes from the rather low alcohol content given the aromatic complexity and the choice not to filter our whisky. This cloudiness comes from the flocculation of oils, esters, oligosaccharides, and fatty acid salts. It offers a bouquet of freshness, nuts, and undergrowth mixed with exotic fruits, which was honored with a score of 90 points by Serge Valentin, to whom we extend our sincere thanks.

Nose

Fresh and lively! Quite pronounced oxidative notes tickle the senses. As the seconds pass, subtle nutty powder appears. The atmosphere is dusty and humid; old barrels are not far away, lurking in the shadows of the cellar.

Palate

The heat is distinguishable, all in caresses. Soaring over porcini mushrooms and barley fields. This flight strikes a perfect balance between grain and fruit. We navigate by sight between the suave and the ethereal. If this whisky were a paintbrush, it would draw a curve. Harmony reigns between the cereal and the vinous notes due to aging.

Finish

The retro-olfaction is both disorienting and mouth-watering. Small exotic notes conclude this tasting. Dotted lines of sweet and tangy mango fully contribute to the overall sensation of freshness and sweetness of this whisky. The pleasure provided by tenderness is a serious matter. Trièves and Jura, cereals and clavelins: the Hautes Glaces duo that continues to prove itself year after year.

Home recipe.

Brewing

Brewing in 3 waters according to the principles of the tea ceremony.

Fermentation

Prolonged fermentation (140 hours), inoculation with natural sourdough.

Distillation

Distilled in 2017. Double distillation over a wood fire. Double pass in the “Petite Bertha” (7 hectoliters).

And lifting

Yellow Wine Barrel.

Reduction

Gradual topping up with water over the years then reduced to 44% in recent months.
