B19F26 ▲ explores the influence of an ancestral, porous vessel: the amphora allows the whisky to breathe while preserving the expression of the grain and the terroir. A unique maturation process, rarely seen in spirit production, inspired by a meeting between Frédéric Revol and the highly inspiring Elisabetta Foradori. Much like wood, these stoneware amphorae offer a porosity that facilitates oxidation-reduction, highlighting the whisky’s minerality and presenting a harmonious balance with the wood tannins.

SALTY CITRUS MINERAL MALTED
To enjoy its delicacy and character, serve at room temperature (17-20°C). Enjoy on its own or as part of a comparative tasting experience with its companion and twin, B19F26 ■ McVin.

Appearance

White gold with silvery highlights.

Nose

A fresh, maritime nose. Saline notes open the tasting, evoking iodine-rich sea spray, mingled with jasmine flowers and bergamot. Then come slightly empyreumatic aromas, giving way to malted cereal that expresses itself clearly. Warm white bread, buttery notes, and quince paste also make an appearance.

Palate

The attack is ample and graceful, carried by a lemony freshness. Citrus and bergamot extend the initial momentum. Notes of anise and sea asparagus reinforce the saline sensation. A chiseled whisky, whose herbaceous freshness highlights the elegance and purity of the grain.

Finish

Remarkably straight and persistent, the finish stretches out with a saline and mouth-watering profile. A few notes of sea salt grains and candied lemon punctuate the palate, leaving a pure, long, cereal-like impression, reminiscent of a ripe summer harvest.

Brewing

Mashing in three waters following the principles of the Tea Ceremony.

Fermentation

Extended fermentation (140h), inoculated with natural sourdough starter.

Distillation

Double distillation over a wood fire, 25-hectoliter pot still.

Aging

Cognac casks followed by a finish in earthenware jars (amphora) for 16 months.

Reduction

Progressive dilution with water over the years for a natural bottling strength of 47.9%

Statement of intent


The B19F26 exploration offers a taste of two whiskies for which the barley (“B” for Barley), of the Amistar variety, was harvested in 2019 (“19”, the harvest year) from one and the same plot located in the Andrieu climate, which adjoins the distillery. This barley harvest was reaped, malted, brewed, fermented, and distilled in the same week. After aging in Cognac casks, their paths diverge and open up new avenues for aging exploration in atypical containers: one continues its refinement in amphorae, the other in Jura Macvin casks.
