Notes

Caryopsis is a botanical term for a dry, indehiscent fruit, typically the fruit of grasses: cereal grain. It is used in the plural here because this whisky is a malted composition created from more than 150 whiskies, each produced from a specific cereal: barley, rye, emmer, spelt, and oats. CARYOPS is thus the fruit of 15 years of exploration: of the specific tastes of the different cereals that Hautes Glaces works with, and of how to blend this diversity to create a unique and complex whisky, a rich and harmonious aromatic dialogue.

Tasting tips

For curious epicureans. It's not every day you get to taste and savor a delicious blend of barley, rye, oats, and both spelt and einkorn. Get your compasses ready! A focus on our little piece of the Alps: the Trièves region. Rural, wild, preserved, generous, and with remarkable agricultural diversity. To be shared with those for whom discovering a terroir, a place, is a source of joy.

PALE YELLOW

Nose

An immediate complexity emerges. The unexpected is often linked to rarity. Here, the rarity comes from the two varieties of spelt, which immediately stand out on the nose. Surprising scents of citrus and dried flowers. An astonishing nose, completely off the beaten path and radar, outside of any commonly accepted references. We're going to dance enthusiastically, without knowing the music.

Palate

Proof by five and in layers. All the cereals find their place. While the spelt varieties stand out on the nose, the oats subtly lead us towards warm, late-summer hay notes.
And beneath this warmth, the sweetness and plumpness of our barley waltz, glide, and spin in tandem with our peppery, sharp, and lively ryes. These are a few steps that make the taste buds swirl. An unprecedented, characterful cereal tarantella. On the palate, from waltz to trance in a matter of seconds. Whiskey or hypnotic potion? To be seen.

Finish

It is juicy, generous, and fresh. Tart English candy and discreet touches of turmeric root envelop us in the end. With the spelt and oats, the taste cursors do not remain fixed. They sometimes slide, as is the case here, towards the Mediterranean region. So far, yet so close to Northern Europe, the birthplace of whiskey.

Development notes

Cereal

Barley, rye, oat, emmer, spelt (malted) from different plots and vintages.

Malting

1.2-tonne drum for oat, emmer, and spelt. Saladin box and 10T drum for barley and rye. Custom recipes adapted to each cereal.

Mashing

Mashing in 3 or 4 waters, following the principles of the tea ceremony.

Fermentation

Extended fermentation (140h), inoculated with natural sourdough.

Distillation

Double distillation over a wood fire. First pass in a 25hl still. Second pass in "petite Bertha," our 7hl still.

Ageing

Complex blending of single-plot eaux-de-vie and "cask strength." Ageing is carried out according to the eaux-de-vie in a selection of French oak barrels with varied and complementary profiles (new sessile and pedunculate oak, whisky roux from Hautes Glaces, Cognac, Armagnac, and wine barrels).

Reduction

Progressive reduction with water over the years to a natural bottling strength of 42.6° respectively.

Caryops is a Single Meld Malt, an aromatic snapshot of the Hautes Glaces cellar in all its diversity, a complex, lively, and malty composition.

Caryops contains over 150 distillates, each the fruit of a specific plot, vintage, and one of the 5 grain species (Barley, Rye, Oats, Emmer, Spelt) that we organically cultivate, season after season, in our mountains.


Depending on its intrinsic quality, each distillate was first placed in a chosen oak cask: sessile oak for some, pedunculate oak for others, or ex-Cognac, Armagnac, or fine wine casks. After 3 years, the selection process begins. The whiskies then enter a complex blending process that spans several years. This time allows the spirits to become accustomed to each other, to complement and reinforce each other, so that the whole transcends the sum of its parts. 
During this time, the whiskies will gradually be topped up with water to slowly reach their balanced proof. This is also a period during which the blend will continuously evolve, as new whiskies will join it year after year.
Caryops thus celebrates the alliance of time, the richness of our mountain grains, and our expertise.
