Tasting tips

Let's offer some iodine to this emblematic seed of the Mediterranean region. Scallop ravioli with leeks, sea bream or crabs, spaghetti with squid ink for a now classic "I surprise my friends". And why not a rather well-aged cheese or a cocktail?

COLORLESS

Nose

Mysteries of ester. Nose on the orchard and complex on the pear, the fresh green apple, and the passion fruit. At first glance the forbidden fruit is however a cereal. After a few moments we wonder if we are not dealing with a slightly crazy brandy since a hint of juniper berry sneaks in very gently.

Mouth

All in softness. Not the slightest aggressiveness on the palate. The balance is there, between a measured fat and an absolutely velvety texture. The drop of spelt oscillates between tenderness and fluidity. No heaviness, mineral purity, the sensation of freshness is gradually conveyed by the quiet acidity of the exotic fruit.

Final

A very lightly toasted brioche highlights the cereal and melted butter. Discreet sweetness and bitterness complete the tasting of this exceptional “white”.

Brewing

Brewing in 4 waters according to the principles of the tea ceremony.

Fermentation

Prolonged fermentation (140 hours), inoculation with natural sourdough.

Distillation

Triple distillation over a wood fire. Two passes in a 25 hectoliter still. The third in a 7.5 hectoliter still.

Breeding

Rested in neutral container.

Reduction

Gradual topping up with water over the years for a natural bottling strength of 43°.

Spotlight on spelt with this confidential vintage. A high-flying eau-de-vie, a caressing texture in the mouth, a taste full of gustatory originality. A vintage for the curious, the finders for those who like to be surprised. Blanche d'épeautre is not a whisky but it has magically leaned over the cradle of the quintessence of the grain.
