"Indigene" is the result of a vision, the reinterpretation of single malt Scotch whisky, the world's leading whisky, in the style of the Hautes Glaces. An exceptional whisky rooted in a territory, nourished by its resources and sublimated by its constraints. Tasting recommandation

To enjoy its delicacy, serve chilled (15-18°C). Indigène can be drunk on its own or accompanied by other wines. It goes very well with an aged Colombard or a Hay Tomme cheese. For dessert, the perfect match is a chocolate pear or chestnut cake.

OF SPRINGTIME GOLD

Nose

A hint of wood combines with notes of candied fruit, white peaches and slightly sour pears. A great freshness emerges, the clarity of a fragrance. Gradually, the almond flavour typical of our single malts takes shape, followed by sweet, pastry-like aromas...

Mouth

A comfortable entry allows us to appreciate a distinguished, well-balanced bitterness. It provides subtle support for the initial malt notes, before another sensual, ethereal and floral setting is revealed: a field of malt embracing the blossom of an orchard, with discreetly saline scents. The palate continues along this line between earth and sky, a high-altitude orchard that gradually reveals other promises, both delicious and complex.

Finish

A sensation of fine sweetness, a smooth, almost creamy texture stretching out the finish toward aromas that are both exotic (lemon, chocolate) and mountainous unfold. At the back of the empty glass dance the promises of the harvest to come: the smell of spring, flowers and barley. The burning desire to take flight again and soar above our peaks. Or when the local (the Indigène) gives you wings.

Grain

100% malted barley. Autumn varieties and stecklings.

Malting

In-house recipe.

Mashing

Brewing in 3 or 4 waters according to the principles of the tea ceremony.

Fermentation

Prolonged fermentation (140h), inoculated with natural sourdough.

Distillation

Double wood-fired distillation in 25 hectolitre pot still.

Ageing

A complex blend of parcel-based eaux de vie from the 2012 to 2019 vintages. Ageing is carried out to match the eaux de vie in a selection of French oak casks with varied and complementary profiles (new Sessile and Pedunculate oak, old Hautes Glaces whisky, Cognac, Armagnac and wine casks).

Reduction

Gradually topped up with water over the years to reach a final degree of balance of 44°.

Indigène is a single malt (100% malted barley) created from a palette of parcel-based eaux-de-vie, an aromatic snapshot of the Hautes Glaces cellar, a complex, lively and malty composition.

Indigène contains over 100 distillates, each made of distinct plots, vintages, varieties of organic barley grown season after season in our mountains.

Depending on its characteristics, each distillate is first placed in a chosen oak cask: Sessile oak for some, Pedunculate for others, ex Cognac, Armagnac or fine wine casks. After 3 years, the selection process begins. The whiskies are then blended in a complex process that takes several years. This is the time needed for the eaux-de-vie to come together, complement each other, strengthen each other, so that the whole is greater than the sum of its parts.

A time during which the whiskies will be gradually topped up with water to slowly reach their degree of equilibrium. During this time, the blend will continue to evolve, as new whiskies are added year after year.

Indigène is a combination of time, our mountain barley and our know-how.
