"L'Indigène" is the fruit of a vision, a reinterpretation of the world's most emblematic single malt Scotch whiskies in an haute-glaçe style. It is an extraordinary whisky, rooted in its land, nourished by its resources, and sublimated by its constraints. "L'Indigène" embodies the strength of its terroir, the grandeur of its landscape, the sincerity of a whisky with an Alpine taste, and the personality of those who make it.

Serving Suggestions
To enjoy its finesse, serve chilled (15-18°C). The Indigène can be enjoyed alone or as an accompaniment to meals. It pairs well with aged Colombard or Hay Tomme cheese. For dessert, it's perfect with a pear and chestnut chocolate cake.

Spring Gold

Nose

Subtle woody notes intermingle with candied fruit, white peach, and slightly tart pear. A wonderful freshness, a limpid fragrance is born. Gradually, the almond flavor typical of our single malts takes shape, followed by the aroma of sweet pastries.

Palate

A pleasant mouthfeel, where a remarkably balanced bitterness can be tasted. Faintly supporting the initial malty notes, another atmosphere, sensual, graceful, and floral, emerges. A field of malt enveloping orchard blossoms with delicately salty hints. The palate continues along this line between earth and sky. High-altitude orchards gradually reveal other delicious and complex charms.

Finish

A fine sweetness, smooth, almost creamy texture, leads to a finish where both exotic (lemon, chocolate) and mountain aromas unfold. At the bottom of the empty glass, the expectation of the coming harvest dances. Scents of spring, flowers, and barley. A burning desire to take flight again, to soar above the mountain peaks. Or when the local (indigenous) person gives you wings.

Manufacturing method

Cereals

100% malted barley. Autumn and spring varieties.

Malting

In-house recipe.

Mashing

Brewed with 3 to 4 additions of brewing water, following the principles of the tea ceremony.

Fermentation

Long fermentation (140 hours) inoculated with natural sourdough.

Distillation

Double wood-fired distillation in 25 hectolitre pot stills.

Aging

A complex blend of eaux-de-vie from different vintages, from 2012 to 2019. The aging is carried out in carefully selected French oak barrels (new sessile and pedunculate oak barrels, ex-whisky, ex-Cognac, ex-Armagnac, ex-wine barrels used at Haute-Glace), offering diverse and complementary profiles adapted to the eaux-de-vie.

Reduction

Gradual reduction over several years, reaching a final alcohol content of 44% for balance.

Andigene is a single malt (100% malted barley) crafted from a palette of plot-by-plot eaux-de-vie, a fragrant snapshot of the Hautes Glaces cellars, a complex and lively malty composition.

 

Andigene contains more than a hundred eaux-de-vie, each one made from a different plot, vintage and variety of organic barley grown seasonally in our mountains.

 

Depending on the eau-de-vie's characteristics, each one is initially placed in its chosen oak cask: some in Sessile oak, others in Pedunculate oak, ex-Cognac, Armagnac, or fine wine casks. After 3 years, the selection process begins. The whisky is then blended in a complex process that takes several years. This is the time needed for the eaux-de-vie to come together, complement each other, reinforce each other and for the whole to be greater than the sum of its parts.

 

Water is added to the whisky gradually, allowing it to slowly reach equilibrium. During this time, new whiskies are added each year, and the blend continues to evolve.

 

Andigene is a combination of time, our mountain barley, and savoir-faire.
