R15D24 ROUND is the second part of the exploration into how the degree of balance impacts the taste of our whiskies.

R15D24 is a parcel whisky made from a single plot of rye (Caroas variety) from the Gabert climate, harvested in 2015. Aged for 8 years in a single cask, the 254, an ex-yellow wine cask, it was then divided into three batches, each worked in reduction around different degrees of balance, each revealing a singular facet of this whisky of character, a clean, tasty and legitimate expression.

Tasting recommendations

To be enjoyed with Francs-Comtois or people you trust. Drink with friends who have Savagnin in their blood. To round off a meal, try chicken curry with fresh coriander or a spicy Thai-style dish (spicy prawns, passion fruit sauce, for example). The smokiness of the rye and the fatty flavour of the yellow wine will smoothly bring this Far Eastern cuisine to a gentle conclusion.

YELLOW GOLD

Nose

A lesson in olfactory balance between the cereal and the encaustic. Country house, old stone, old furniture, overgrown priest's garden, the windows creak and let spring into the bedroom.

Mouth

It's easy to imagine that there are a few barrels of yellow wine resting in the cellar, waiting for a clavelin waltz. After a few seconds, a scent of fresh hazelnut crumble emerges clearly, accompanied by a bouquet of pepper and pink berries. It's vinous, it's as spicy as one could wish for.

Final

Warm, soft and tender. Remarkably long on the palate. What comfort! A reassuring whisky, typical of armchair clubs and thick leather. What a nose! An orchard sprinkled with sweet spices. Such fine aerobatics!

Preparation notes

Cereal

100% rye (malted), 2015 harvest, Gabert Cliamte.

Malting

1.2 tonne drum. Domestic recipe.

Brewing

Brewing in 3 waters according to the principles of the tea ceremony.

Fermentation

Prolonged fermentation (140h), inoculated with natural sourdough.

Distillation

Distilled in 2016. Double distillation over a wood fire. First pass through a 25hl still. Second run in « little Bertha » our 7hl. still

Maturation

Yellow wine cask.

Reduction

Gradual topping up with water over the years to achieve a natural bottling degree of 52°.

Titled at 52° like a numerology of comfort. The warmth is cuddly, the palate supple and flavoursome. Silky and cosy, it offers a beautiful harmony between the influence of the cask and the spicy character of the raw material, rye. The rye vein: spice, pepper and pink berries. Limited to 153 bottles.
