At Hautes Glaces, we have been working with rye whisky, alpine and organic, since the beginning.
Rye is a demanding grain, deeply connected to our terroir, which forges characterful, demanding, and unique whiskies. For this exploration, we started from the same point: Caroas rye, a local variety traditionally used for bread, rustic and resilient, grown on a small plot at the foot of Mont Aiguille, harvested in 2020. This rye was malted, brewed, fermented, and distilled in the same week.
During the barreling process, the distillate was first aged in Cognac red... before finishing its journey in new barrels.
With Episteme, we seek to understand how a specific factor in the development
influences the taste. Here, only one parameter changes: the type of new wood used for the finish.
