B17P25 ■ is a vintage, single-plot whisky made from barley harvested in 2017. It has matured in Cognac oak: a subtle maturation process that allows the terroir's unique character to shine through. Bottled at 45% ABV, B17P25 ■ invites you to (re)discover a complex and balanced single malt with medicinal, fruity, mineral, and vegetal notes. A wonderful introduction for those who want to experience the expression of a specific vintage and plot. Limited to 1219 bottles.

Tasting notes

Citrus and Cardamom Mineral and Vegetable Cereal
To fully appreciate its delicacy and character, serve at altitude temperature (17-20°C). Enjoy it alone or in a comparative experience, with its companion and exploration twin, B17P25●.

Dress

Pale and luminous gold.

Nose

The opening reveals a an intriguing medicinal character, quickly enriched with fresh citrus notes delicately enhanced with a touch of gunflint which underlines the minerality of this whisky.

Mouth

The attack is rounder and comfortable, contrary to what the nose suggested. The mouth it unfolds first into an enveloping curve, then evolves towards spicy notes of cardamom. The The mid-palate reveals a mineral and earthy character.

Final

The finish is marked by vegetal and cereal notes, in homage to the delicacy of the grain.

Preparation note

Cereal

100% malted barley. Organically grown by the Ailloud-Perraud brothers. 2017 harvest. "Gabert" plot.

Malting

Homemade recipe.

Brewing

Brewed in 3 stages according to the principles of the Tea Ceremony.

Fermentation

Prolonged fermentation (140h), inoculation with natural sourdough starter.

Distillation

Double distillation over a wood fire, 25 hectolitre pot still.

Lifting

Cognac red.

Reduction

Gradual topping up with water over the years to achieve a natural bottling strength of 45°

Statement of intent


Through Epistémè B17P25, we invite you to explore the influence of vineyard plots and microclimatic effects on a 100% malted barley whisky. With the CARRÉ bottling, nothing fundamentally differs from its twin except for the plots where the barley used in its production was grown. Here, we are in a plot with deep, clay soil, belonging to the Gabert farm, located on a promontory at an altitude of 752 meters.
