Dress

Pale and luminous gold.

Nose

The initial aroma is surprising, with a first sensation of fresh menthol that quickly gives way to a luscious and fruity peach salad. The evolution continues towards a malty opening, with rising notes of pastry cream.

Mouth

The initial taste is Marked by a pleasant salinity and a savory character that awakens the taste buds, a gentle salivation develops, heralding the arrival of a silky and smooth texture. The flavors then unfold with buttery, brioche, and malty notes, revealing a whisky of great finesse.

Final

The final is complex and Elegant, with notes of poppy, a delicate bitterness, and subtle vegetal nuances. An invitation to travel. poetic and pastoral through fields of barley and poppies.

Preparation note

Cereal

100% malted barley. Grown using organic and regenerative farming methods by Frédéric Revol. 2017 harvest. "Vulson" plot.

Homemade recipe.

Brewing

Brewed in 3 stages according to the principles of the Tea Ceremony.

Fermentation

Prolonged fermentation (140h), inoculation with natural sourdough starter.

Distillation

Double distillation over a wood fire, 25 hectolitre pot still.

Lifting

Cognac red.

Reduction

Gradual topping up with water over the years to achieve a natural bottling strength of 45°

Statement of intent

Through Episteme B17P25, we invite you to explore the influence of vineyard plots and microclimatic effects on a 100% malted barley whisky. With The ROND cuvée is fundamentally no different from its twin except for the plots of land where the barley necessary for its production was grown. Here we are on the slopes of Serre Vulson - the rhyolitic puy from which our spring water springs - in a small plot of the Hautes Glaces farm.
