In this beautiful book, through the intimate story of the creation of the Domaine des Hautes Glaces – the world's first 100% organic farm-distillery – Frédéric Revol places whisky production at the heart of current environmental and social issues. He tells us about the history of this spirit drink, its technical and industrial evolution over the centuries, but also about peasant seeds, regenerative agriculture, alternatives and the fight for the transition. In this work, both erudite and intimate, an aesthetic quest emerges chapter after chapter where the constraints and natural limits of a territory become sources of creativity and innovation, where the connection to the land and the pleasure of collective work forge a journey of tastes.

Building on this success and on the occasion of the 15th anniversary of Domaine des Hautes Glaces, Frédéric Revol, agricultural engineer and whisky enthusiast, is publishing a book retracing his incredible path of ecological and taste transition which led him to produce an exceptional whisky with the least possible resources.

The book is composed of several chapters alternating between pages of narrative and photos that illustrate it, where the author returns to his desire to create a whisky by applying the principles of organic and regenerative agriculture. It also includes a technical summary on the manufacture of whisky: cereal cultivation, malting, brewing, fermentation, distillation, aging and maturation to learn everything about this exceptional spirit.
