R20W26 ★ Acacia offers a taste of a whisky made from Caroas rye (“R” stands for Rye), harvested in 2020 (“20” is the harvest year) from a single plot of land at the foot of Mont Aiguille. During maturation, the distillate was first aged in Cognac casks, before continuing its journey in new acacia wood casks, a rare and little-known wood in the world of whisky. This bold whisky reveals a complex aromatic profile where the spicy notes of rye intertwine with the fruity sweetness of honey and quince, all enhanced by smoky and gamey touches of exceptional depth.

To fully appreciate its delicacy and character, serve at altitude temperature (17-20°C). Enjoy it on its own or as part of an experience compared, with her classmate and twin of classmate and twin R20W26 ●. A self-proclaimed UFO, if you have the soul of an adventurer, this whisky is not a marked trail.

Dress

Golden.

Nose

On the nose, rye asserts itself, evoking a field after the harvest and the distinctive scent of burnt hay. Then it leads us to the sweetness of quince jelly left on a rustic table, and a faceted jar of honey, somewhere between pollen and beeswax. Gourmand touches of licorice and candied citrus complete this olfactory picture, complemented by a nostalgic note of fairground candies.

Mouth

The palate reveals a lasting surprise. The attack, unexpectedly sweet and almost animalistic, gives way to a smoky, carnal, and gamey character, reminiscent of the deep aromas of mountain cuisine cooked over a fire. This whisky is distinguished by its full, oily texture and generous, offering an enveloping "chew". The rye then unfolds with a syrupy and oily persistence, gliding gently and smoothly over the palate.

Final

The finish fades, like a bonfire dying out, but not without leaving a lasting impression. The sweetness of the grain and the vibrancy of the spices linger, inviting a lingering, savory contemplation.

Preparation note

Cereal

100% malted rye. Grown using organic and regenerative farming methods by Frédéric Revol. 2020 harvest. "Mont Aiguille" plot.

Malting

Homemade recipe.

Brewing

Brewed in 3 stages according to the principles of the Tea Ceremony.

Fermentation

Prolonged fermentation (140h), inoculation with natural sourdough starter.

Distillation

Double distillation over a wood fire, 25 hectolitre pot still.

Lifting

Cognac red wine then finished in acacia barrels for 9 months.

Reduction

Gradual topping up with water over the years to achieve a natural bottling strength of 48°
