Notes

R20W26 ⬤ Oak offers a taste of a whisky made from Caroas rye (“R” stands for Rye), harvested in 2020 (“20” stands for harvest year) from a single plot of land at the foot of Mont Aiguille. Before casking, the distillate was first matured in Cognac, then completed its slow journey in a new French oak cask. While oak is a classic in the world of whisky, here it is masterfully handled to sculpt an aromatic harmony between the oak and the rye. The result is a precise, balanced rye whisky, true to the “Hautes Glaces” style.

To fully appreciate its delicacy and character, serve at altitude temperature (17-20°C). Enjoy it alone or in a comparative experience, with its companion and twin of exploration R20W26 ★. A whisky for reading, to pay homage to the cereal, the original sap of the High Ice Age.

Dress

Amber.

Nose

The nose opens with an invigorating menthol freshness, mingling eucalyptus and fir resin. This luminous opening then gives way to deeper nuances: charred oak, sweet cocoa, and tonka bean. Like a fleeting evocation of certain molasses rums. In the background, a delicate violet and restrained vanilla reveal a sublimely integrated and balanced woody presence.

Mouth

The initial taste is remarkably delicate: a fine yet dense texture of exquisite lightness. It unfolds a silky, almost milky consistency, with notes of orgeat, poached pear, and melted sugar, resulting in perfect sweetness. All of this is enhanced by a subtle spicy tension, where juniper and myrtle contribute a vibrant complexity.

Final

The finish lingers with refined elegance on the spices, perfectly balanced, without any showiness.

Preparation note

Cereal

100% malted rye. Grown using organic and regenerative farming methods by Frédéric Revol. 2020 harvest. "Mont Aiguille" plot.

Malting

Homemade recipe.

Brewing

Brewed in 3 stages according to the principles of the Tea Ceremony.

Fermentation

Prolonged fermentation (140h), inoculation with natural sourdough starter.

Distillation

Double distillation over a wood fire, 25 hectolitre pot still.

Lifting

Cognac red wine then finished in new oak barrels for 13 months.

Reduction

Gradual topping up with water over the years to achieve a natural bottling strength of 48°
