At Hautes Glaces, our quest for terroir begins with organic and regenerative agriculture. Simplified cultivation techniques, long rotations and crop diversity, agroecological infrastructure are all agricultural practices that reinforce local specificities and allow the terroir to express itself.

XO is the most accomplished expression of our approach initiated more than 15 years ago . A Single Estate whisky conceived as a "grand cru" that invites you to taste this exceptional terroir. 

With this fourth release , XO#4 opens a new chapter. This exceptional single malt blends our oldest vintages, using barley sourced from the estate's historic vineyards. A precise, intense, and elegant blend, XO#4 is a mature whisky that invites you to discover the gustatory expression of the quality of the relationship between humankind and nature.

Tasting tips

XO#4 is a tribute to exceptional terroir, to be savored slowly, by a fireplace, after an outdoor activity.

Dress

Deep gold with coppery highlights

Nose

The initial aromas evoke wild cherry, supported by dried rose and a hint of toasted hazelnut. Then comes roasted cocoa, whose warm, earthy scent indicates careful barrel aging. A nose that asserts itself without being overpowering.

Mouth

The attack is fresh, almost floral, before gliding into a full and caressing texture. Red fruits linger over notes of dark chocolate and toasted hazelnut. Then black tea, dried fig, and Agen prune create a pastry-like heart of flavor, woven with depth. A kaleidoscope of sensations, where each facet of the malt expresses itself in a new and comforting light.

Final

Long, saline, and subtly tannic. The rose echoes back, mingling with notes of tonka bean and a delicate bitterness of black tea. A rare persistence, like a memory that won't fade.

Brewing

Brewed in 3 stages according to the principles of the Tea Ceremony.

Fermentation

Prolonged fermentation (140h), inoculation with natural sourdough starter.

Distillation

Distilled in 2013. Double distillation over a wood fire. Double pass in a 25 hectolitre still.

Cognac barrels

Reduction

Gradual topping up with water over the years to achieve a natural bottling strength of 47°

XO, the fourth of its name, is a cellar gem, a Single Estate whisky, a "grand cru" made from barley grown on the estate's historic plots and enhanced with excellence and care, from field to cellar.
