Notes

XO#3, only 305 bottles of this exceptional Single Malt, a single-parcel whisky from the Andrieu plot surrounding the distillery in Cornillon. A historic plot on the estate, the Climat Andrieu is the epicentre of the Hautes Glaces farm where we have been practicing organic, regenerative, and peasant farming for over 15 years. Harvested in 2012, this Vanessa variety barley was distilled in July 2013, then aged in our cellar in communion with the Condrieu cask where it rested peacefully for 12 years. 44.8% ABV.

Nose

One could spend a long time with this nose without getting tired of it. A boundless sensory immersion, the nose calls for patience as much as it calls for time to stand still. More than a fragrance, it's a whisky! Inspiring, breathing! Lightness and complexity hand in hand. Freshness and exoticism are intertwined. Touches of star anise and a pinch of turmeric support the vegetal notes of white flowers. The northern right bank of the Rhône in a new, yet so familiar, light.

Palate

A controlled and saline richness as the recipe for surprising bliss. A sip of menthol freshness, battling with ample and pastry-like generosity. The arbiter is in the shade of a eucalyptus tree. Lovers of pastries like Paris-Brest or choux pastry will fall for this sweet madness with gourmet notes of freshly roasted almonds and hazelnut praline.

Finish

A bergamot finish infuses a boost of vigour, a timely balance that makes this Single Malt a marvel of intricacy and creaminess. The sweet spices return at the end of the palate, it's powerful and refined, invigorating and warm. A vintage of flesh and brilliance.

1.2 Ton drum. Domestic recipe

Mashing

Three-water mashing following the principles of the Tea Ceremony.

Fermentation

Extended fermentation (140h), sourdough inoculation.

Distillation

Distillation July 2013. Double wood-fired distillation. Double pass in a 25 hectoliter still.

Gradual topping up with water over the years for a natural bottling strength of 44.8°

XO, the third of its name, is a cellar gem, a Single Estate whisky, a "grand cru" crafted from barley grown on the estate's historic plots and masterfully and carefully enhanced, from field to cellar.
