B19F26 ■ explores another path of maturation using a former Macvin cask, the iconic fortified wine of the Jura. This Macvin cask was sourced from the Petit family at Domaine de la Renardière, with whom Hautes Glaces shares the same values. In Pupillin, the Petit family farms 6 hectares of organic vineyards, harvesting entirely by hand and carrying out winemaking with minimal intervention, highlighting the quality and flavors of the typical Jura grape varieties.

PASTRY JURA WINE SWEET AND PEPPERY SPICES DRIED FRUITS

Appearance

Venetian gold.

Nose

The initial attack is warm and festive, dominated by candied apple, cotton candy, and a very comfortable vinous touch. The second nose offers a profile of tension and freshness tinged with fruity notes of strawberry and raspberry. Opening up brings a more vegetal and camphorated breath, reinforcing this beautiful sensation of liveliness.

Palate

From the first sip, the atmosphere is of absolute comfort. The substance is dense, both rich and powdery, coating the palate with suppleness. A generous indulgence with accents of golden kouglof, dried fruits, and browned butter, hazelnut. The pastry-like roundness finds a harmonious balance thanks to a persistent retro-olfaction that reminds us of the fond memories of the Macvin's Jura past.

Finish

Without ostentation and with perfect precision, the finish stretches elegantly over a frame of sweet spices and peppery notes, leaving a structured and indulgent impression.

100% malted barley. Grown using organic and regenerative farming practices. 2019 harvest. "Andrieu" plot.

Brewing

Three-water mash following the principles of the Japanese tea ceremony.

Fermentation

Extended fermentation (140h), inoculated with natural sourdough starter.

Distillation

Double wood-fired distillation in 25-hectoliter copper pot stills.

Aging

Cognac casks followed by a 12-month finish in Jura Macvin casks.

Reduction

Gradual dilution with water over the years to a natural bottling strength of 47.2% ABV.

Statement of intent


The B19F26 exploration offers a taste of two whiskies for which the barley (“B” for Barley), of the Amistar variety, was harvested in 2019 (“19”, the harvest year) from one and the same plot located in the Andrieu climate, which adjoins the distillery. This barley harvest was reaped, malted, brewed, fermented, and distilled in the same week. After aging in Cognac casks, their paths diverge and open up new avenues for aging exploration in atypical containers: one continues its refinement in amphorae, the other in Jura Macvin casks.
