Notes

Selected by La Maison du Whisky for their "Foundation" catalogue, B17CS24 (CS: Cask Selection) is a whisky made from Himalaya barley, a variety well-suited to our cold mountain climate. Harvested in 2017 and distilled in our stills early in February 2018, this spirit was then matured in a cask that had previously contained a Côtes du Rhône white wine. The memory of the wood from Roussanne and Viognier will give it a unique and special taste. Special due to its precisely vinous character. Unique because the resulting flavour profile is not typical of Hautes Glaces. Exceptional and rare: only a few bottles available on the website, with the remaining 216 bottles at La Maison du Whisky.

For those with a sweet tooth who like to enjoy a "coup de punch" after a feast.

AMBER COLOR

Nose

The strength of barley: a nervous sweetness emerges very quickly. Shrouded in peppery, medicinal (balm), fruity (pear) and lemon aromas, egg custard quivers in the bain-marie. Strong, ethereal but reassuring. The scent evokes images of checkered tablecloths and flowery kitchen aprons. Dessert comes out of the oven.

Palate

Clean, taut. Initially fermentary (mash, malting barley), the taste palette is also deliciously peppery and fruity. Green licorice and almond milk flavors evolve into sweeter registers, with an oily texture offering a reassuring balance. With time, white fruits (pear, apple) refresh the taste buds with their tangy juice.

Finish

A massive single malt-type finish! The power creams the palate, the length is downy. Endowed with a very pleasant vegetal bitterness (gentian, oregano), the tasting now evokes a remarkably fresh white beer, infused with medicinal (verbena, chamomile, white mint) and resinous (fir, eucalyptus) flavors.

Energized by a few lemon zests, the retro-olfaction adds a honeyed (acacia, birch) and milky (rice pudding) touch to the very end of the palate.

100% Malted barley. Himalaya variety, 2017 harvest, Vulson Climate.

Malting

Homemade recipe.

Brewing

Three-water brewing according to the principles of the Tea Ceremony.

Fermentation

Extended fermentation (140h), inoculation with natural sourdough.

Distillation

Double distillation over a wood fire. First pass in a 25-hectoliter still. Second pass in a 7hl still.

Aging

White Wine Cask (Roussanne, Viognier). 

Reduction

Gradual topping up with water over the years for a natural bottling strength of 57.3°
