A rye eau-de-vie as an ode to a grain that is emblematic of our 'high country', but also of the world of spirits. A concentration of flavours and a depth of texture that will delight the taste buds of spirits lovers. A racy character to elevate any mixologists' creations. It is also a tribute to Doctor Pierre Vulson de la Colombière, who in 1638 praised the waters gushing from the volcano shaped mountain which now bears his name. It was on this land that the Hautes Glaces farm was established, and it is these springs that now feed the distillery to create VULSON.

In this beautiful book, through the intimate story of the creation of the Domaine des Hautes Glaces – the world's first 100% organic farm-distillery – Frédéric Revol places whisky production at the heart of current environmental and social issues. He tells us about the history of this spirit drink, its technical and industrial evolution over the centuries, but also about peasant seeds, regenerative agriculture, alternatives and the fight for the transition. In this work, both erudite and intimate, an aesthetic quest emerges chapter after chapter where the constraints and natural limits of a territory become sources of creativity and innovation, where the connection to the land and the pleasure of collective work forge a journey of tastes. Introducing our exploratory collection: unique editions to taste the many facets of the Hautes Glaces terroir. These limited editions invite you to discover the richness and complexity of the know-how involved from field to bottle. Whisky produced on a parcel-by-parcel basis, the influence of grain, yeast, cask or cellar, new cereals or seasonality... Epistémè offers an ever-changing journey of taste.

To help you find your way through this aromatic infinity, the editions of the Epistémè collection have an original code name, reflecting the exploration specific to each cuvée.



Code name: Episteme

Epistemè nf, from the ancient Greek “ἐπιστήμη”, which means science, in the double sense of knowledge and the capacity to be “learned in action”.


The Epistémè limited editions bear an original code name, reflecting the exploration specific to each vintage: the first letter designates the cereal used, the first ten corresponds to the vintage. The second letter announces the exploration (yeast, season, variety, plot, etc.) and the second ten reveals the year of bottling.


The name ends with a form, which distinguishes the different expressions within the same exploration.

B17P25 - The Full Exploration

Through Episteme B17P25, we invite you to explore the influence of plots and microclimatic effects on a 100% malted barley whisky. The two expressions of B17P25 are almost identical: these two Single Malts come from two distinct batches of barley processed using identical production methods. Each of the two batches was malted, mashed, fermented, and distilled using similar recipes. Each of the two batches was harvested at maturity in July 2017, one from the Gabert plot and the other from the Vulson plot, and comes from the same barley variety, known as "Himalaya," a mountain fodder variety.The two batches of spirits differ only in their micro-provenance: the plot where the barley was cultivated. B17P25 is an ode to the taste of terroir and the subtlety of climatic influences on our whisky. We could have asked you to choose. We invite you to taste! R20W26 ⬤ Oak offers a whisky whose rye ("R": Rye), of the Caroas variety, was harvested in 2020 ("20", harvest year) from a single plot located at the foot of Mont Aiguille. During barreling, the distillate was first aged in Cognac red wine casks, then finished its slow journey in a new French oak cask (oak in English). While this wood is a classic in the world of whisky, it is tamed here with precision, aiming to sculpt an aromatic harmony between oak and rye. The result is a precise, accurate, and true-to-the-"Hautes Glaces" style rye whisky. Limited edition of 582 bottles.

R20W26 ★ Acacia offers a whisky whose rye ("R": Rye), of the Caroas variety, was harvested in 2020 ("20", harvest year) from a single plot located at the foot of Mont Aiguille. During barreling, the distillate was first aged in Cognac red wine casks, then continued its journey in new acacia wood casks, a rare wood little explored in the world of whisky. This audacious whisky reveals a complex aromatic profile where the spicy notes of rye intertwine with the fruity sweetness of honey and quince, all enhanced by smoky and gamey touches of rare depth.Beware, UFO! B17P25 ■ is a vintage, single-plot whisky made from barley harvested in 2017. It has matured in Cognac oak: a subtle maturation process that allows the terroir's unique character to shine through. Bottled at 45% ABV, B17P25 ■ invites you to (re)discover a complex and balanced single malt with medicinal, fruity, mineral, and vegetal notes. A wonderful introduction for those who want to experience the expression of a specific vintage and plot. Limited to 1219 bottles.

Bottled at 45% ABV, B17P25 ● is a harmonious and refined single malt, captivating with its aromatic complexity and silky texture. Limited to 1108 bottles.

Episteme R15C25 ■ is the first of the twin expressions of the R15C25 exploration, an experiment on the influence of the journey of the same eau-de-vie in two separate series of casks. Originally, the two R15C25 expressions came from the same single-vineyard, vintage distillate, both whiskies created from the same raw material: rye (Caroas variety), harvested in the Gabert vineyard in 2015 ("R15"). After distillation in July 2016, the distillate underwent two distinct maturation processes, resulting nine years later in two Rye Whisky expressions with specific aromatic profiles. Epistémè R15C25 ■ has aged in two casks – a process known as double maturation; first in new oak for the initial weeks, then for the following nine years in Cognac casks. These two casks share the same wood type: French oak (Quercus Robur) – characterized by a predominance of coarse grains, which contribute more tannins, structuring the whisky. This first expression unfolds fresh and ethereal notes of spice and dried fruit. Limited edition of 666 bottles.
