Exceptional spirits

Ancestor of wheat whose thousand-year-old origins are located in the Alpine arc, spelt is the emblematic cereal of the Mediterranean rim. Long forgotten in the world of milling before a few bakers brought it back into fashion in the early 2000s, non-existent in the world of spirits, it didn't take much more to make us want to sow a few hectares of it on the Gabert climate in 2011 ! After S12U23 ★ last year, here is the whisky from this plot aged for an additional year. With S12U24 ★, we are offering you an ascending tasting, the beginning of a path that will lead us to discover the fabulous potential of spelt in terms of whisky!

True to our reputation as a pioneer in taste. True also to our natural disposition in favor of cereals and their environment; the Domaine des Hautes Glaces offers you with this bottle a beautiful way to discover the great spelt in its "white" version. This triple distillation of "wheat of the Gauls" will give a little more grain to grind to dreamers, to those for whom distillation is both a concrete know-how and an alchemist's mystery. And for good reason: a brandy of a rare aroma, at crazy speed!

B16D24 CARRÉ is a single-plot whisky from a single plot of barley from the Vulson climate, harvested in 2016. Aged for 8 years in a single cask, a former Vin Jaune cask, it was then divided into two batches, to offer an experience of the influence of the alcoholic strength on the nature of a whisky, 2 expressions with unique characters and their own flavors. B16D24 TRIANGLE is a cask strength! It has been bottled at its natural degree of aging, 52.3%, where time leads it: a massive, generous, opulent whisky with a good-natured side and a mellowness full of delicacy. B16D24 CARRÉ has seen a gradual reduction in its alcohol content by adding water to reach 44% vol. At this level, B16D24 CARRÉ offers balance and tasty comfort, a promise of gourmet freshness.

B16D24 TRIANGLE is a single-plot whisky from a single plot of barley from the Vulson climate, harvested in 2016. Aged for 8 years in a single cask, a former Vin Jaune cask, it was then divided into two batches, to offer an experience of the influence of the alcoholic strength on the nature of a whisky, 2 expressions with unique characters and their own flavors. B16D24 CARRÉ has undergone a gradual reduction in its alcoholic strength by adding water to reach 44% vol. At this strength, B16D24 CARRÉ offers balance and tasty comfort. B16D24 TRIANGLE is a cask strength! It was bottled at its natural degree of aging, 52.3%, where time has led it: a massive, generous, opulent whisky, with a good-natured side and a mellowness full of indulgence.

RØØF24 STAR is the first part of the exploration of the influence of the finish on the taste of our whiskies. RØØF24 STAR is a 100% malted single rye, blended from several vintages and the Hautes Glaces’ two emblematic climates: Gabert and Vulson. A true backbone with a strong character, this matrix comes from a blend of several rye distillates, all aged in Cognac casks. This cuvée will serve as the benchmark for the three other cuvées to follow, all of which have undergone a second maturation (finish) in wine casks.  Peppery, greasy and a burst of grain energy, RØØF24 STAR is a Hautes Glaces signature.

RØØF24 TRIANGLE is the second exploration of the influence of the finish on the taste of our whiskies. RØØF24 TRIANGLE is a 100% malted single rye, blended from several vintages and the Hautes Glaces’ two emblematic climates: Gabert and Vulson. After a long maturation in Cognac casks, our rye was then refined for five months in two casks that had contained a red wine from the Côtes de Duras. Normally we prefer white wine casks, but the absence of dogmatism when it comes to taste exploration can lead to some wonderful surprises. And this is one of them! A successful and harmonious combination red and rye, these two worlds melt powerfully together in your glass.

RØØF24 SQUARE is the third part of the exploration of the influence of the finish on the taste of our whiskies. RØØF24 SQUARE is a 100% malted single rye, blended from several vintages and the Hautes Glaces' two emblematic climates: Gabert and Vulson. Initially aged in Cognac casks, this rye whisky was then refined for the last five months, in optimal comfort, in two casks of yellow wine, a sign of our particular affection for the Jura terroir and its wines, which are both surprising and original, to say the least.

RØØF24 ROUND is the fourth part of the exploration of the influence of the finish on the taste of our whiskies. RØØF24 ROUND is a single rye, 100% malted, coming from the blend of several vintages and the two emblematic climates of the Domain: Gabert and Vulson. After a long maturation in Cognac casks, our rye was then finished for five months in ex-Sauternes casks. The South-West of Bordeaux, the Sauternes terroir in the spotlight, a first for Hautes Glaces. Rye and Sauternes, why not? We'll find our rye strenghtening up the mellow Sauternes. And the tenderness of the Sauternes cradling the energy of rye. Action!

Aged for 8 years in a single cask, the 254, an ex-yellow wine cask, it was then divided into three batches, each worked in reduction around different degrees of balance, each revealing a singular facet of this whisky of character, a clean, tasty and legitimate expression.

As the world's oldest organic distillery, S12U23* takes us into uncharted horizons. While the (Anglo-Saxon) whisky world has focused on processing barley, rye, corn and wheat, Hautes Glaces has been inspired since 2011 by a grain forgotten by the spirits world: spelt. Time and patience will then do their work, refining the ardour of this exceptional eau de vie to forge the character of this unprecedented cuvée.

With Epistémè R18P23, we invite you to explore the influence of parcels and microclimatic effects on a 100% malted rye whisky. With the cuvée SQUARE, nothing about this cuvée is fundamentally different from its twin, with the exception of the plots where the rye needed to make it was grown. This expression came from the foot of the Mont-Aiguille cliffs, in limestone scree fed by the run-off waters of the Vercors and their sediments.

With Epistémè R18P23, we invite you to explore the influence of parcels and microclimatic effects on a 100% malted rye whisky. With the cuvée ROUND, nothing about this cuvée is fundamentally different from its twin, except for the plots where the rye used to distill it was grown. Here we are on the slopes of the Vulson - the rhyolitic stone extinct volcano from which our spring water gushes - in a small parcel on the Hautes Glaces farm.

B15C23 TRIANGLE is the first of the twin expressions in this new exploration. Epistémè B15C23 are two Single Cask made from a single plot of barley harvested in 2015 in the "climat Vulson" . Two distillates made in the same week from the same raw material, the same malted barley. The B15C23 exploration focuses here on the influence of the cask. On the journey, starting from an identical place, that these two beverages will have taken during their maturation. Placed in two separate casks when coming out of the still (a sixth-fill old Hautes Glaces's whisky cask and a refill white wine Crozes-Hermitage cask), this new Epistémè diptych will take you to regions both near and far... two limited editions to explore (487 and 438 bottles).

B15C23 ROUND is the second of the twin expressions in this new exploration. Epistémè B15C23 are two Single Cask made from a single plot of barley harvested in 2015 in the "climat Vulson" . Two distillates made in the same week from the same raw material, the same malted barley. The B15C23 exploration focuses here on the influence of the cask. On the journey, starting from an identical place, that these two beverages will have taken during their maturation. Placed in two separate casks when coming out of the still (a sixth-fill old Hautes Glaces's whisky cask and a refill white wine Crozes-Hermitage cask), this new Epistémè diptych will take you to regions both near and far... two limited editions to explore (487 and 438 bottles).
